I ran across this recipe during one of my searches for quick easy dinner recipes with chicken that were less than $5 to prepare.

My kids love any kind of pasta dish that includes chicken and this was quick and easy to make, tasted delicious and now has a favorite spot in my personal cookbook.

It’s another perfect cheap meal for the family.

Cheap Cooking Ingredients:
• 1 chicken boiled and de-boned (I have also used a pkg. of legs or thighs)
• 1 can cream of chicken soup
• 1 can rotel
• 1 10 oz. pkg. of spaghetti noodles
• 10 oz. velvetta cheese

 

Easy Dinners Directions:
1. Boil and de-bone chicken.
2. Boil spaghetti noodles (use chicken broth if you have it for better flavor)
3. Cut velvetta into chunks, mix with 2 tbsp. of margarine and let sit at room temperature for about 20 minutes.
4. Mix cream of chicken soup and rotel in baking dish, add chicken and spaghetti then mix in cheese.
5. Bake at 350 degrees for 20 minutes.

Meal Assembly:
Serves 4 – Dish up a side of buttered green beans and slices peaches for a quick easy healthy meal!!
Tip: Add ¼ cup of milk if mixture is dry after baking.
Tip: Double the batch for a freeze ahead meal next week!

Red Beans in a Crockpot

Crockpot meals is not only the easiest way to prepare a meal but one of the cheapest.

Cooking beans in the crockpot will not only save time but the end results will have better texture and taste.

Red Beans in a Crockpot

Prep: 15 minutes

Cook: 6-8 hours

Meal Preparation Ingredients:

  • 16 ounces kidney beans
  • 1 large bell pepper, chopped
  • 1 large onion, chopped
  • 3 stalks celery, chopped
  • 1 small carrot, finely sliced
  • 1 tablespoon Tabasco sauce
  • 4 cloves garlic, crushed
  • 1/4 teaspoon thyme
  • 1/4 teaspoon sage
  • 1/4 teaspoon marjoram
  • 3 tablespoons parsley
  • 1/2 teaspoon white pepper
  • 1/2teaspoon black pepper
  • 1/2 teaspoon red pepper

Meal Preparation Directions:

  1. Put everything in the crock pot on high heat.
  2. Cook on high, covered for 6-10 hours. Check liquid level, adding water if needed to cover the beans.
  3. You can add ham or beef to complete the meal.

Meal Assembly:

Serves 20 – serve with a dinner salad and some fresh dinner rolls for a complete healthy dinner.

Tip: Double the ingredients for a make ahead freezer meal!

Breakfast waffles for dinner?

Waffles for Dinner

Serving a breakfast dish for dinner that’s a cheap meal ideas/recipes your family will eat it up

1 box pancake mix ($1.00 )

1lb strawberries ($2.00) (If in season if not replace with a fresh fruit that is in season and on sale)

2 pkg. link sausage ($0.97 each at wal-mart)

Prepare waffle recipe as directed on the box (usually just requires adding oil and eggs). Pour onto waffle maker per waffle-maker directions. Fry bacon until fully cooked. Slice strawberries and sprinkle with 3 tbs. of sugar (more if you like them sweet). Prepare waffle as desired with butter and syrup or top with the sugar strawberries. Serve with bacon and fruit.

( note if you don’t have a waffle maker (get one they are great) follow the directions for pancakes.)
