Mom’s Recipe For Magic Cookie Bars

I have to admit this is my favorite cookie recipe

Even though it is actually a bar, it tastes like the best chocolate chip cookie you have ever eaten.

My mom has made these bars for years at all the family gatherings, holiday dinners or just whenever she wanted to treat us kids with our favorite dessert.

The original recipe called for layering the ingredients but my mom tweaked the recipe so that the chocolate chips are melted on top and when set makes a YUMMY combination.

I hope you enjoy the recipe as much as my family does, I recommend double batches as they go fast.

Magic Cookie Bars

Personal Cookbook
Prep Time: 10 minutes
Cook Time: 25-30 minutes

Meal Preparation Ingredients:

  • 1 1/4 cup graham cracker crumbs
  • 1/2 cup (1 stick) butter or margarine, melted
  • 1 (14 oz. can) sweetened condensed milk
  • 2 cups (12 oz.bag) semi-sweet chocolate chips
  • 1 1/3 cups flaked coconut
  • 1 cup chopped nuts (optional)

Meal Preparation Directions:

  1. In a small bowl combined graham cracker crumbs and butter, mix well.
  2. Press crumb mixture firmly on bottom of 13×9 baking pan.
  3. Spread flaked coconut over crumb mixture.
  4. Pour sweetened condensed milk evenly over mixture.
  5. Preheat oven to 350 degrees and bake for 25 to 30 minutes or until lightly browned.
  6. Remove from oven, sprinkle chocolate chips evenly over the top.
  7. Place back into the oven for 5 minutes or until chocolate chips are melted.
  8. Remove from oven and with a butter knife spread the melted chocolate chips until smooth.
  9. Add chopped nuts if desired and allow to cool for 2 to 3 hours or until chocolate sets.

Meal Assembly:
Makes approx 2 1/2 dozen. Cut into bars or diamonds. Store in an airtight container.
TIP: Poke a hole in each side of the can of sweetened condensed milk for easier pouring.
TIP: You can also layer the coconut, chocolate chips and nuts for a different variation. Add the sweetened condensed milk to the crumb mixture then  make layers with the rest of the ingredients.

Even though Thanksgiving is over I though I would post the most delicious Pumkpin Cake Dessert Recipe, it is cheap and easy to prepare and for those of you who love pumpkin pie, you will devour this Pumpkin Cake.

 

Pumpkin Cake

My Mom’s Recipe
Prep: 15 Minutes
Set: 20 Minutes
Bake: 45 Minutes

Meal Preparation Ingredients:

  • 1 Yellow Cake Mix
  • 3/4 cup butter
  • 3 egg
  • 2 cups regular pumpkin (need 1 big can to have enough)
  • 3/4 cup brown sugar
  • 1 tsp. pumpkin pie spice
  • 1/4 tsp. salt
  • 3/4 cup canned milk
  • 1 tsp. vanilla
  • 1/4 cup sugar
  • 1 tsp. cinnamon

Meal Preparation Directions:

Bowl 1 – mix together very well 2 cups pumpkin, 3/4 cup brown sugar, 1 tsp. pumpkin pie spice, 1/4 tsp. salt, 2 eggs, 3/4 cup canned milk, 1 tsp vanilla. After mixing set aside for approx 20 minutes, mixture will start to thicken.
Bowl 2 – mix together 1 cake mix (hold back 1 cup for bowl 3), 1/2 cup butter, 1 egg.
Bowl 3 – mix 1 cup of cake mix help from bowl 2, 1/4 cup sugar, 1 tsp. cinnamon, 1/4 cup soft butter. Mix should be crumbly, this is the topping for the cake.

  1. Preheat oven to 350 degrees
  2. Grease 9 x 13 cake pan
  3. Press ingredients from bowl 2 into bottom of pan
  4. Pour ingredients from bowl 1 into pan next
  5. Sprinkle ingredients from bowl 3 on top
  6. Bake for 45 minutes or until lightly brown and toothpick comes out clean.

Meal Assembly:

Serves: 8-10 Can be served warm or cold. Add whipped cream or vanilla ice-cream to the top. This is a sure crowd pleaser so if your looking for something different to take to that holiday party, Pumpkin Cake will be a hit!
