A traditional family dilemma – no time – needs a modern solution – crock pot pot roast. I am the first to say with all the demands on my time, I find it difficult to get a healthy meal on the table.

Cook Time: 8 1/2 to 9 hours on Low
Serves: 10-12

 

Cheap Cooking Ingredients:

  • 1 beef chuck roast (about 2 1/2 lbs.)
  • 3 unpeeled baking potatoes (about 1 lb.) cut into quarter
  • 2 large carrots, cut into 3/4 inch slices
  • 2 stalks celery, cut into 3/4 inch slices
  • 1 medium onion – sliced
  • 1 large parsnip, cut into 3/4 inch slices (optional but even better with it)
  • 2 bay leaves
  • 1 tsp. dried rosemary
  • 1/2 tsp dried thyme
  • 1/2 cup beef broth*

Easy Dinner Directions:

  1. Trim excess fat from beef and discard, cut beef into serving size pieces and sprinkle with salt and pepper.
  2. Combine potato, carrot, celery, onion, parsnip, bay leaves, rosemary and thyme in crock pot.
  3. Place beef on top of vegetables and pour broth over beef.
  4. Cook on low 8 1/2 to 9 hours or until beef is fork tender.

Cheap Meals YES – Feed Count Stats NO

Hi guys, just thought I’d give a quick shout to the man above, GOOGLE that is…..I have Cheap Meals and lots of them but wait I HAVE NO FEED COUNT STATS still!!

IF you frequent the blog then I’m sure you have noticed the Feeder Count Stats for my site has been sitting at an ugly 0 or even worse N/A for almost 2 weeks now.

I’m a pretty patient person and I have waited like Google said, I even checked out the Feed Count blog to see I could find some help and so far nothing.

The “no count” was starting to depress me so I just disabled it all together. When Google transferred over my Feed burner accounts, the problem began.

Now I have to admit the stat count wasn’t high but at 16 to 18 feed readers daily I am darn proud of that. I have worked very hard to get those readers, “Thank You Feed Readers” by the way.

I hope they get this fixed soon. To any fellow blogger reading this, if you know of a better plug-in that is working with the Google switch or some little trick to bring my feed stats back please leave a comment. I have seen many blogs like mine without their usual Feed Stats Count showing as well.

Easy Meatloaf Recipe

I have found an easy meatloaf recipe that you are going to love and if you looking for a cheap meal idea then this is it.

I try to make meatloaf often for the fact that ground beef is inexpensive and filling.

The only downfall to a great meatloaf is the bake time.

I’m in a hurry these days and most nights I want quick dinner ideas prepared and on the table fast or we would be eating at 8:00pm, which in my house is bedtime for the kids (YEAH!!)

So how do you make an easy meatloaf recipe? Simple, mini meatloaves baked in a muffin pan.

I know, I asked myself the same thing, why didn’t I think of that one!

The bake time is cut in half.

And of course the possibilities of what you add to the recipe are endless.

Marvelous Mini Meatloaves

Bake Time: 30 minutes
Yield: 6 servings – 2 mini meatloaves each

Cheap Cooking Ingredients:

  • 1 lb. ground beef
  • 1 pkg. stove top stuffing
  • 1 cup of water
  • 1 tsp Italian seasoning ( I use dry spaghetti packet)
  • 3/4 cup spaghetti sauce
  • 3/4 cup mozzarella cheese (any variety of cheese will work)

Easy Dinners Directions:

  1. Mix meat, stuffing mix, water and seasoning until well blended.
  2. Press evenly into 12 muffin cups sprayed with cooking spray.
  3. Make an indentation in the center of each meat loaf using a spoon then fill with spaghetti sauce.
  4. Bake 30 minutes or until cooked through, top with cheese and bake 5 more minutes or until cheese is melted.
  5. Let stand for 10 minutes before serving.

There you have it, a simple ground beef meal that was less than $5 to prepare. Add in a side salad and some french bread for a complete healthy meal idea.
