Make Ahead Shrimp Salad Sandwich Recipe

This is a simple make ahead recipe for shrimp salad sandwiches. You can prepare the shrimp salad ahead of time to freeze for sandwiches, roll-ups or as a shrimp dip with crackers.

After attending a family function the other night, I was given 5 leftover 40 count shrimp rings. Great I thought, I love shrimp and so does my husband.

Well after enjoying a shrimp snack I thought to myself, what am I going to do with all this shrimp? I new I could freeze some, but being the cheap meals planner that I am I wanted to get creative with some make ahead meals as well.

I found some great shrimp recipes online but if you follow my blog you know my meals are simple, very simple. I am not chef  in the making by any means. I usually look for 5 ingredients or less when trying out a recipe, that’s all my budget and patience can handle.

I did however find a shrimp salad sandwich recipe that was simple, you just kinda throw it all into a blender and spread it on bread. I liked the though of preparing this ahead of time, using the leftover shrimp and having lunch throughout the week.

Another bonus – I was assigned to bring an appetizer to a pot luck the next day and guess what – I made cold shrimp salad roll-ups!! They were perfect, different and enjoyed by all.

Shrimp Salad Sandwich

Shrimp Salad Sandwich

Serves: 4

Ingredients:

  • 1 pound cooked shrimp, peeled and de-veined
  • 3 hard-boiled eggs, finely chopped
  • 3 stalks celery, minced
  • 1/2 cup mayonnaise
  • 1 dash onion salt
  • Salt and pepper
  • Seasoning salt
  • Celery salt
  • 8 slices your choice bread, toasted
  • Lettuce and tomato slices, optional

Directions:

  1. Place shrimp in a food processor and pulse until finely minced. Transfer shrimp to a bowl and add eggs, celery, and mayonnaise; mix well. Add seasonings, to taste, and stir to combine. Spread onto bread of your choice, top with optional lettuce and tomato slices. Serve with some fresh melon for complete healthy meal.

Shrimp Salad Roll-up’s: replace bread with whole wheat or white tortillas and cut into 1 inch slices for a creative appetizer or snack.

Pizza For The Family for Less Than $3.00

Tuesday’s $5 menu idea is dedicated to the kids. Buying Pizza for our big family is out of the question right now so we make our own, each of us including the kids!

This is a cheap family meal that everyone can help with.

As I focus on meals for the week that will help save some “dough” for the Holiday’s this cheap meal idea/recipe comes in for less than $3.00 depending on optional toppings.

Prep Time: Should take only 5 minutes but you may want to include kids playtime with the food!
Cook Time: 10-15 minutes

Meal Preparation Ingredients:

  • 1 can super size jumbo biscuits
  • 8 1/2 tbsp. spaghetti sauce or tomato sauce
  • Mozzarella, Cheddar and American Cheese or Colby Jack to sprinkle on top
  • (optional) Pepperoni, sausage, ham, olives, onion…whatever you like the sky is the limit

Meal Preparation Directions:

  1. Take a biscuit, flatten it (not to thin) use a rolling pin, roll sides up for crust on biscuit.
  2. Spread about 1 1/2 tbsp around in the center of biscuit
  3. Top with cheese and any optional toppings – pepperoni etc…
  4. Bake at 350 degrees for 10-15 minutes or until golden brown

Meal Assembly:
Serves 4. Add a side salad and bowl of fresh fruit for a complete healthy meal.

A Warm Cheap Meal Idea/Recipe for a Cold Winter Day

As I bundle the kids up and load them on the bus this morning I realize boy it is getting cold.

Winter is fast approaching and it is time to dust off the soup recipes and warm the dinner menu’s up a bit.

So I dug through my personal cookbooks and found the best Broccoli and Cheese soup recipe.

This recipe is cheap to make, so very easy to prepare and if you double or triple the batch it will make the perfect make ahead meals to freeze for lunch or dinner for next week.

Make Ahead Meals

Easy Cheesy Broccoli Soup

Prep: 5 minutes
Cook: 20 minutes
Meal Preparation Ingredients:

  • 3 bunches of broccoli
  • 1 quart of half and half
  • 1/2 cup of margarine
  • 10oz. bottle of cheese whiz
  • 2 cans of chicken broth
  • 1 1/4 cups of flour

Meal Preparation Directions:
1.    Cook broccoli. Then set aside.
2.    Heat margarine, half and half and chicken broth over medium heat until slow boil.
3.    Slowly add flour while stirring briskly.
4.    Cook until mixture becomes thick.
5.    Add cheese whiz and cooked broccoli then heat over low until hot.
Meal Assembly:
Serves 4- 6 – I serve this soup in a bread bowl with 4 or 5 saltine crackers and a side of fruit for a complete meal that is kid approved and healthy.
TIP: This soup is the perfect make ahead meals recipe as it holds well during reheat so double or triple the batch for lunch and dinner next week.
