A Pancake Recipe For A Cheap Meal

Creating cheap meals can be difficult and for my family boring. Having a good variety of menus to choose from is what this site is all about.

Some cheap meal recipes lack in the WOW factor so you have to get creative with meal planning and offer choices.

My family loves pancakes. The pancake is a traditional American breakfast. But as a busy mom raising 5 kids I don’t always have the time to make a nice warm breakfast in the morning. My kids usually get cold cereal with milk.

So I create pancake dinners. I have a pancake recipe for just about everything from fresh fruit pancakes to my favorite copy-cat I-hop pancake recipe.

It’s an inexpensive dinner option and my kids love it. I add in some bacon or sausage, maybe some hash browns and we have a complete cheap meal for the family.

This is a great new meal idea giving your meal planning the variety it needs. The bags and boxes of pancake mix are convenient but if your really looking to save a buck or two then check this out.

Puffy Oven Apple Pancake Casserole

I tried this simple breakfast casserole recipe for a simple Sunday brunch a few weeks ago and it was so good.

It’s called Puffy Oven Apple Pancake Casserole and it’s one of those cheap cooking recipes every one has to try.

The ingredients are very basic (making it a cheap recipe), I had everything already in the pantry or refrigerator.

The only possible draw back was the 30 minutes you have to let the pancake mix sit before baking but an easy and even better solution was to prepare it the night before, cover and refrigerate until ready to use.

Puffy Oven Apple Pancake

Serves 4
Prep Time: 30 minutes (can mix the night before, cover and refrigerate.)
Bake Time: 15-20 minutes

Cheap Cooking Ingredients:
Pancake:

  • 1 1/2 cups flour
  • 1 1/2 cups milk
  • 6 large eggs
  • 1 tbsp. sugar
  • 1 tsp. salt
  • 1/2 cup (1 stick butter)

Apple Filling:

  • 2 large Golden Delicious or Granny Smith Apples, peeled and sliced
  • 1 tbsp. butter
  • 1/4 cup brown sugar
  • whipped cream (optional)

Easy Meal Directions:
Pancake:

  1. Mix flour, milk, eggs, sugar, salt and let stand for 30 minutes.
  2. Preheat oven to 450 degrees, place baking pan or casserole dish in oven and add butter.
  3. Remove once butter is melter, pour pancake mixture into heated pan and return to oven.
  4. Bake for 15- 20 minutes or until edges are puffed and golden.

Apple Filling:

  1. While pancake bakes, add apples and butter to a skillet and cook 5-10 minutes or until tender.
  2. Add brown sugar and stir until dissolved then transfer to a serving bowl.

To serve: Cut pancake into quarters and fill each serving with apples. Top with whipped cream if desired.

TIP: make sure the family / guests are at the table, ready to eat as the pancake will slump quickly.

Holiday Brunch One Dish Bake for Less Than $5 To Make

Christmas is only a few days away so I thought I would add one last Holiday recipe.

Many families celebrate the Holiday with a Christmas Brunch so I wanted to include a simple One Dish Bake that is inexpensive and YUMMY!

My husband loves to cook but our family tradition for Christmas involves visiting family and celebrating Christmas Dinner at their home.

So to try and get some nutrition into our children after a chocolate high from their stocking candy we prepare this simple One Dish Breakfast Casserole.

It is easy to prepare and costs less than $5 to make. We add some fresh fruit and hash-browns and my family loves it.

Breakfast Casserole

Personal Cookbook
Prep Time: 5 minutes
Cook Time: 1 hour

Meal Preparation Ingredients:

  • 2 cups diced ham
  • 2 cups milk
  • 2 cups grated cheese
  • 6 eggs
  • 10 slices of bread – no crust
  • 1 Tbsp.. green onion (optional)

Meal Preparation Directions:

  1. Mix together and bake at 350 degrees for 1 hour

Meal Assembly:
Serves 6. Add some fresh fruit and hash-browns for delicious breakfast or brunch that is complete, nutritious and simple to prepare.
