The secret to Yankee Pot Roast is a rich brown dark gravy full of the concentrated vegetable taste. The crock pot provides this.

Just add one or two envelopes of instant gravy mix (depending on amount you are making) to the crockpot before adding the beef broth which I increase by a 1/3 of a cup.

I also add a cap full of Gravy Master to get a really dark color.

If I have some turnips or rutabaga I add just a small amount to the crockpot also for flavor.
